A toast to a great lunch!

Lunch inspiration is one of my biggest struggles. I often don’t know what to eat for lunch. That means that I usually leave for work with no lunch. Ofcourse I have to eat at noon! Lucky for me there is a supermarket next to the company where I work. Well, I am not sure I’d call that lucky anymore. That is probably the reason I am too lazy to pack myself a lunch at home. I just go to the supermarket and get myself a prepared meal, salad or wrap. This is quite the cost. Making my lunch at home would save me a lot of money. So, I decided it was about time I would tackle this situation and came up with some easy and delicious lunch options!

I started with 4 different options to create a delicious toast. The first toast option I called HUMMUS LOVER. Why? Well, I would say that is pretty clear no? The second toast I called HOLY GUACAMOLE. The name of the toast reveals already a lot. The third toast I called OMELET HEAVEN. This toast is with guacamole and omelet. Finally, I called the fourth and last toast BRIE MINE. This one is my personal favourite. That’s probably due to the fact that I am a big fan of cheese. This toast combines the strong cheese flavour with a fresh and sweet fruit flavour.

All of the above mentioned toast are super easy to make. They don’t have to many ingredients. I hope that this gives you a little extra inspiration on what to pack for lunch!

Ingredients
Toast 1: Hummus Lover
  • 100 grams of hummus
  • 20 grams of rucola
  • 20 grams of walnuts
  • 2 slices of bread (white or brown, depending on what you prefer)
Toast 2: Holy guacamole
Toast 3: Omelet Heaven
Toast 4: Brie Mine

Instructions
Bereiding HUMMUS LOVER toast
  1. Toast a slice of bread.
  2. Smear hummus on your toast.
  3. Add a bit of rucola and some walnuts. You can also add a bit of balsamico vinegar.
Bereiding HOLY GUACAMOLE toast
  1. Toast a slice of bread.
  2. Cut the avocado in half and spoon out of the peal. Squash the avocado with a fork. Add half a tablespoon of lime juice and half a clove of garlic.
  3. Cut half a tomato and half an onion in small pieces. Add to the avocado mix. Mix everything well. Your guacamole is done!
  4. Cut the 4 cherry tomatoes in half.
  5. Smear the guacamole on the toast. Now add the cherry tomatoes and season with pepper.
Bereiding OMELET HEAVEN toast
  1. Toast a slice of bread.
  2. Cut the avocado in half and spoon out of the peal. Squash the avocado with a fork. Add half a tablespoon of lime juice and half a clove of garlic.
  3. Cut half a tomato and half an onion in small pieces. Add to the avocado mix. Mix everything well. Your guacamole is done!
  4. Mix 2 eggs with half a tablespoon of semi-skimmed milk. Season with salt and pepper.
  5. Beat the eggs. Add some butter to a frying pan and fry the egg mix.
  6. Smear the guacamole on the toast and add the omelet.
Bereiding BRIE MINE toast
  1. Toast a slice of bread.
  2. Cut the brie in small slices. Then cut half an apple in small slices.
  3. Put the slices of brie on your toast and add the slices of apple.
  4. Finally, sprinkle the cranberries on top. You can also sweeten the toast by adding some honey.
