Roe with prunes

The new rabbit with prunes. 

Do you know the recipe ‘ rabbit with prunes’? You have probably heard from it! No, we are not cooking rabbit with prunes tonight! So, what are we cooking then? Roe with prunes! This recipe is based on the original recipe for rabbit with prunes. I made the roe with sage, onion and dark beer. Wild meat and dark beer tend to match well. Often, the recipe rabbit with prunes is also made with dark beer. Then I chose to work with dried prumes in stead of frech ones, because they have a fuller flavour.

The preparation of the recipe.

This recipe takes only 15 minutes to prepare! I decided to fry the roe in a frying pan in stead of cooking it in the oven. How do you make this recipe? Well, that is easy! . First you cut and fry your onion. Then you add your roe and season with thyme and pepper. Let it fry for 4 minutes and then add the dried prunes and sage. Let everything simmer for another 3 minutes. Instructions
  1. Fry the pommes duchesse in a deep fryer.
  2. Cut the onion in small pieces.
  3. Fry them in a pan with a bit of butter for 1 minute.
  4. Now add the roe and season with pepper and thyme. Fry for about 4 minutes on a medium-heated fire.
  5. Then add the prunes and sage and let everything simmer for another 3 minutes.
  6. Finally add the 150 ml of dark beer. Stir-fry 1 more minute.
  7. Serve the roe with the pommes duchesse.
