I used to be a big fan of the recipe ‘vogelnest’. Every time it felt like a surprise when I opened up my meatball and found a boiled egg inside. This got me thinking. Personally, I am not a big fan of regular potatoes. If I am cooking at home, I don’t include potatoes in my recipes. Nevertheless, I love the sweet potato!! Preparing a sweet potato in 15 minutes was actually quite the challenge! I tried to cook/bake it in several ways to see which was the best method. Of course, I took the texture of the potato into account as criteria. Nobody wants a quick but flat potato, right? I ended up grilling the sweet potato for 10 minutes and then I put it for another 5 minutes in the microwave! Tadaaa! Read more

It is time for a new 15 minute recipe! After a few cheat days, I felt like having a light and healthy meal. For this recipe I chose to work with just vegetables and poultry. No potatoes? That’s right this time no potatoes, pasta or rice! A delicious piece of turkey schnitzel is served with a fresh salad of tomato, cucumber and mozzarella. After having lived in Portugal for six months, I took over their habit of always adding extra vierge olive oil on top of my vegetables. So sprinkle the tomato and cucumber with olive oil! Of course I also have to season it with salt and pepper! Don’t hold back! Now, enough talking, let’s get down to business!

The Belgian company 15gram organised a competition where you had to make one of their 15-minute dishes. The only thing you had to do was make the recipe and take a picture of it that you shared on Instagram. Ofcourse this contest was right in my alley! Cooking in 15 minutes is one of my strong suits! To create new recipes, I always start from the thoughts in my head. I will tell you the steps I go through to create a recipe. Step 1 for me is usually coming up with combination in my head. Just thinking about what I think would taste good together. For step 2 I shop the ingredients I need online and usually I come across some other ingredients that I didn’t think of. Sometimes that means I alter the recipe I thought of in step 1. The most important step is step 3. This is the step where I make and taste the recipe. Sometimes it just tastes good, and well sometimes it doesn’t. In case of the latter I start searching for an alternative.

A toast to a great lunch!

Lunch inspiration is one of my biggest struggles. I often don’t know what to eat for lunch. That means that I usually leave for work with no lunch. Ofcourse I have to eat at noon! Lucky for me there is a supermarket next to the company where I work. Well, I am not sure I’d call that lucky anymore. That is probably the reason I am too lazy to pack myself a lunch at home. I just go to the supermarket and get myself a prepared meal, salad or wrap. This is quite the cost. Making my lunch at home would save me a lot of money. So, I decided it was about time I would tackle this situation and came up with some easy and delicious lunch options!
